
It has been a long time since I posted a recipe on my blog, but recently I felt like posting a recipe. This salad is very refreshing and very summery and it tastes soooooo good, even in the winter time. Also I would say this goes well with grilled food.
For this Thai salad for Two you will need:
Ingredients Salad
- 1 x Mango
- 3 x Handfuls of beansprouts
- 1 x red Pepper
- 2 x Spring onion
- Half a cucumber
- 3 x Handfuls of julienne’d carrots ( I cheated and got already julienne’d carrots)
- 1 x portion rice noodles
Prepare the rice noodles as instructed and wash them afterwards with cold water. Also make sure that the noodles drain well. Dice the mango, pepper, cucumber in bite size pieces. Either cut or slice the spring onions in pieces. Put all ingredients ( including the bean sprouts) in a bowl. Then start with the dressing.
Dressing
- 2x Gloves Garlic
- 1x Tablespoon of Soy sauce
- 2x Tablespoons of Fish sauce
- 2x Tablespoons of Lime juice
- 2x Tablespoon oil
- 2x Tablespoons of sugar
Fry the garlic in the oil until translucent. Poor in a bowl the soy sauce , fish sauce and the lime juice. Transfer the garlic and oil in in the bowl and add the sugar and taste if the dressing is missing anything. If your done with the dressing, poor the dressing over the salad and mix well. Eat ASAP! You don’t want a soggy salad!
I hope you all liked this recipe. So if you did, please like or leave a comment! Very stupidly I forgot to put in this salad some red onion and the coriander. Sooooo, to make it even more delicious put half a red onion (finely diced), and a handful of coriander in the salad.

I will skip the coriander (not a fan), but I will give that one a go pretty soon. I think I have everything except the mango already in my fridge.
